The Bastilla Coffee Estates is located in the northeast region of Jinotega, Nicaragua--a dense rainforest with large mountain lakes and rich volcanic soil. Micro farms have been established throughout the estate--each with their own microclimate. This coffee is strictly high grown at 1300-1500 masl. The Bastilla Coffee Estates has been Rainforest Alliance Certified since 2003 due to its ongoing pursuit of excellence in coffee production and commitment to the environment.
Bastilla Estates employ 50 year-round workers and 600 seasonal harvesters. During harvest, ripe, red cherries are picked. Coffee is placed in steel tanks and the oxygen is removed--the high sugar content will serve as fuel for the anaerobic process. The anaerobic process, borrowed from the wine industry, yields a clean, bright cup, bursting with tropical fruit and delicate floral notes.
This anaerobic coffee is notably smooth at first sip with notes of starfruit, lychee, jasmine, and honey. The honey-like smoothness carries the cup, and as it cools, the tropical notes, characteristic of the anaerobic process, take center stage and the coffee brightens.
